It’s time for turkey

When the hustle and bustle of the holidays slows down and you’ve cooked your last magical meal of the season, it’s nice to open the fridge and see a container of leftover turkey. That turkey is full of potential, and best of all, it’s so easy to make into something tasty and new!


We’ve come up with a few tips.

Snuggle up with soup and a sandwich

Tried and true, this classic combo will warm you up on winter days. All this meal will take is some bread, a little bit of butter, and some turkey. If you have some leftover dinner rolls, that’s even better. Serve your simple sandwich alongside a pot of soup for a satisfying, super quick comfort meal.

If you want to take your turkey sandwich up a notch (and use up more leftovers!), try a grilled turkey and brie sandwich with cranberry sauce. Butter two slices of bread. Put a slice of brie onto the unbuttered side of one piece of bread, add some shredded turkey and a couple spoons of cranberry sauce, and then top with the second piece of bread, butter-side out. Grill in a medium pan until the brie is melted – or use a panini press if you have one. Have soup on the side.

Come on down to casserole city

When you want to make another main course, it’s as simple as cooking up a casserole. You can even prepare this one ahead of time. Just make sure you let the dish come to room temperature from the fridge before you throw it in the oven.

Chop up about 2 cups of leftover turkey and add it to a casserole dish with the same amount of cooked pasta, veggies like chopped carrots, peas or broccoli (or whatever you have on hand), and 2 cans of Tim Horton’s Cream of Broccoli Soup. Stir in 1½ cups of milk or milk alternative. When you’re ready to cook, top the casserole with breadcrumbs and cheese, toss it in the oven at 350°F and bake it for around 25 to 30 minutes until the cheese is melted and the topping is golden brown.
