Roasted Chicken Wrap, Your Way
Every family member has different tastes, so lay out shredded or sliced chicken, lettuce and tomatoes with large flour tortillas and let each person choose their own dressing or sauce. For those who like it spicy, opt for Co-op Gold Hot Wing Sauce. For those who like it creamy, try Co-op Gold Caesar or Ranch dressing.
Creamy Pesto Chicken Pasta
Chop 2 cups of chicken while you cook a 500 g package of Co-op Gold pasta. Once pasta is al dente, drain and return it to the cooking pot along with chicken. Stir in a cup of half-and-half or whipping cream and heat it on medium to get it bubbling, stirring to prevent sticking. When the cream thickens to a saucy consistency, remove from heat and stir in a cup of your favourite pesto. Finish with Parmesan cheese and a grind of pepper.
Roast Chicken Fattoush
Fattoush is a Middle Eastern bread salad that’s a satisfying meal on its own. In a frying pan with a bit of oil, heat two cups of chopped chicken seasoned with a half tsp each of salt, cumin, coriander, turmeric and oregano, and two chopped cloves of garlic. Stir to coat. When chicken starts to crisp, remove from heat, squeeze half a lemon over it and set aside.
On a platter, arrange a bed of lettuce, chopped tomatoes, cucumber and red onion slices. Crumble Co-op Gold Firm Feta over the greens and top with chicken. Add Co-op Gold Pita Crackers and drizzle with Co-op Gold Pure Tzatziki and dollops of Co-op Gold Pure Hummus.
Chicken and Roasted Veggie Bowl
Cook Co-op Gold Pure Quinoa, Co-op Gold Basmati Rice or whole grain of your choice according to package directions, using vegetable or chicken broth in place of water. Cube sweet potatoes, red peppers and mushrooms, or any multi-coloured mix of vegetables you have on hand. Toss them in a bit of olive oil and your favourite spice mix (we like Co-op Gold Maple BBQ Spice Seasoning) and roast at 375°F for 15 minutes.
Toss chopped rotisserie chicken and kale in oil and spices. Give the roasting veggies a stir and add the chicken and kale. Return to the oven for another 10 minutes, until chicken is sizzling and kale is bright green and starting to crisp around the edges. Divide grains between bowls and top with chicken and roasted veggies.

Coconut Peanut Chicken Lettuce Wraps
Shred chicken and toss with equal amounts of shredded carrots and a quarter cup of chopped green onions. Make a quick peanut sauce using a half cup of Co-op Gold Pure Coconut Peanut Butter, 1 tbsp each soy sauce and maple syrup, 1 tsp Sambal Oelek and the juice of two limes (2 to 3 tbsp). Thin with a few tablespoons of water for a spoonable consistency. Peanut-free tip: Or, try one of Co-op’s ready-made sauces like Thai-Style Sweet Chili or Sweet Teriyaki Sauce.
Put a whole leaf of lettuce in the palm of your hand. Add a tablespoon of steamed Co-op Gold Jasmine Rice, then the chicken and vegetable mixture. Top with peanut sauce and wrap the lettuce over the filling. Eat it over your plate – it can get a little messy, but it’s worth it!
