Let's Eat: Real, good Italian

Amongst the many things Italy is known for, food is undoubtedly one of the most popular cultural exports. North Americans have adapted Italian dishes for their own, but many are made for convenience rather than the fresh, quality ingredients that embody true Italian cuisine.

While an Italian matriarch may yell “a mangiare,” meals are more than just about eating. Meals are a time for family and friends to spend time sharing and enjoying each other’s company. This isn’t exclusive to formal occasions, which can last hours. A traditional Italian meal is generally longer than that of other cultures and is made up of three or four courses.

1. Antipasto

Antipasto literally means before the meal. This course is meant for nibbling and can be served hot or cold, such as a simple platter combining the saltiness of prosciutto, sweetness of melon and richness of shaved parmigiano reggiano.

2. Primo

The first course generally consists of a hot, non-meat dish like pasta, risotto, polenta or gnocchi. Try Rigatoni al Forno with Bolognese Sauce, adding the pasta to the sauce – instead the reverse.

3. Secondo and Contorno

Secondo is considered the main course, serving any variety of meat or fish. One example is scallopini, a common dish of thinly sliced meat like veal dredged in flour, sautéed and served with a sauce. Contorno is a side dish that is generally served alongside secondo, but not on the same plate. It can be composed of cooked vegetables, like asparagus, or lighter salad, like mixed greens and cucumber drizzled with oil and balsamic vinegar.

4. Dolce

While an Italian meal may end with fruit or cheese, there are plenty of options for those with a sweet tooth. There’s tiramisu and panna cotta, but gelato or sorbetto may also be enjoyed.

Serve Italian food family style, sharing all the dishes round your table. Meals are always served with bread, which can be used as a utensil, and end with an espresso. Using fresh local ingredients in season, take your time to savour the flavours of Italy. Salute!
