When firing up the grill, it's easy to default to the usual suspects: hamburgers, chicken, pork chops or steak. But there's a whole world of fresh and bright summery flavours to be found under the waves.
Don't let an unfamiliarity with these amazing ingredients hold you back. Here are three ideas to help you incorporate seafood into your next backyard bash. Trust us, embrace these tips and recipes and your friends will want to come over every weekend for an alfresco meal!

Shellfish love a good grilling
Whether it's clams, mussels or others, shellfish can get a huge flavour boost once they're tossed on the barbecue. Placing shellfish directly on the grill will impart added flavour that you won't find in a quick steam or boil. Once the shells pop open, the world is your oyster (pun mildly intended) when it comes to what you can top them with, but a little lemon butter is a delicious bet.
Crab meat can amp up most summer salads
Skip the messy and awkward process of making your guests crack into crab shells. Instead, add generous amounts of juicy, cooked crab meat to things like potato of Caesar salads. The result is a salad that tastes a little richer and more indulgent but refreshing at the same time.
Turn "surf and turf" bite-sized
The combination of steak and lobster tails or big, plump prawns is always a satiating one, so take the concept and skewer it. Cube good quality steaks, season and skewer them with prawns or chunks of lobster meat. When cubed, cooking steak to a nice medium-rare has a similar cook time to these two shellfish. Eating à la skewer makes for easier barbecue socializing, too!
