- Look for a steak with a good amount of marbling. Those white flecks and streaks provide flavour and promote tenderness.
- For a steak that’s both flavourful and tender, select a cut that comes from areas furthest from the hip, such as a ribeye or tenderloin.
- A darker colour is a sign of aging which translates to tender steak with deep flavours. A 28-day dry-aged steak will be darker still!
- Season generously with cracked pepper and sea salt before your steak hits the grill. Pro-tip: Add a post-grill baste of flavoured butter or herbs and olive oil.
- Steak continues to cook once it comes off the grill and the juices need time to redistribute. Remove it from the grill when it reaches a few degrees below your desired temperature, then allow it to rest at least five minutes before serving.
