Wing Sauce

Ingredients
| 20 | wings, grilled to doneness | |
| 2 | cups fish sauce | |
| ½ | cup sugar | |
| 4 | tablespoons rice-wine vinegar | |
| ½ | bunch cilantro, chopped | |
| 4 | shallots, finely chopped | |
| 2 | bird’s eye chilies, chopped (to reduce spiciness, remove seeds before chopping) |
Directions
In a bowl, combine all ingredients but wings. If desired, adjust sauce to your taste by adding additional sugar or a splash of rice-wine vinegar. To serve, toss the hot wings in the sauce and enjoy.
