Ingredients

20   wings, grilled to doneness
2   cups fish sauce
½   cup sugar
4   tablespoons rice-wine vinegar
½   bunch cilantro, chopped
4   shallots, finely chopped
2   bird’s eye chilies, chopped (to reduce spiciness, remove seeds before chopping)

 

Directions

In a bowl, combine all ingredients but wings. If desired, adjust sauce to your taste by adding additional sugar or a splash of rice-wine vinegar. To serve, toss the hot wings in the sauce and enjoy.
