White Chocolate Raspberry Brownies

Ingredients
| 1 | cup CO-OP GOLD Salted Butter | |
| 2 | cups CO-OP GOLD Semi-Sweet Chocolate Chips | |
| 3 | large eggs | |
| 1 | cup sugar | |
| 1 | cup all-purpose flour | |
| 2 | tsp baking powder | |
| 3 | tbsp cocoa powder | |
| ¼ | tsp salt | |
| ⅓ | cup CO-OP GOLD White Chocolate Chips | |
| 1 | cup fresh raspberries | |
| HAAGEN-DAZS Ice Cream |
Directions
Prep time: 10 minutes
Total time: 40 mins
Serves: 6 to 8 as dessert
1. Preheat oven to 350°F. Spray or grease a 10 by 10-inch glass or metal non-stick cake pan. Place butter and semi-sweet chocolate chips in a microwavable container and microwave for 3 minutes on 70 per cent power, stirring several times until melted. Mix thoroughly afterwards.
2. Whip eggs and sugar by hand with a whisk or in a stand mixer on high for 1 minute. Add chocolate-butter mixture and blend for 1 minute.
3. Add flour, baking powder, cocoa and salt. Mix on low until blended, about 1 minute.
4. Pour batter into pan and spread out evenly. Evenly distribute raspberries in the batter, pushing them down with your fingertips. Sprinkle white chocolate chips over the top.
5. Bake for 25 to 30 minutes. Test if the cake is done by inserting a cake tester or toothpick into the centre. Let cool before slicing and enjoy with ice cream.
