Watermelon Orzo Salad

Ingredients
| 225 | g orzo | |
| 4 | tbsp fresh lime juice | |
| 2 | tsp CO-OP GOLD PURE Unpasteurized Liquid Honey | |
| ⅓ | cup CO-OP GOLD Extra Virgin Olive Oil | |
| 4 | tbsp finely chopped fresh basil, plus small leaves for garnish | |
| ¼ | tsp black pepper | |
| 2 | cups chopped seedless watermelon | |
| 2 | packed cups baby arugula | |
| 1 | cup CO-OP GOLD Crumbled Feta Cheese, plus more for topping | |
| ⅓ | cup CO-OP GOLD Pine Nuts, lightly toasted | |
| ¾ | tsp kosher salt |

Serves: 6–8
1. Cook the orzo
Bring a large pot of salted water to a boil. Add the orzo and cook according to the package directions until al dente. Drain and rinse under cold water to cool completely. Drain well.
2. Make the dressing
Whisk together the lime juice and honey in a large bowl. Slowly pour in the olive oil, whisking until well combined. Stir in the chopped basil and season with the salt and pepper.
3. Combine and enjoy
Add the cooked orzo to the dressing and toss to coat. Add the watermelon, arugula, feta and pine nuts, tossing just to combine. Season with salt and pepper. Serve topped with basil leaves and more feta.
