Tomato, avocado, bacon and mozzarella bush pie
|2||tablespoon CO-OP GOLD Mayonnaise|
|2||slices square bread|
|¼||cup CO-OP GOLD Shredded Mozzarella|
|¼||cup cherry tomatoes, halved|
|¼||cup avocado, ¼-inch dice|
|2||tablespoons CO-OP GOLD Bacon, cooked and chopped|
|2||tablespoons red onions, thinly sliced|
|½||tablespoon basil, chopped|
|Salt to taste|

Cook Time: 15 minutes
- Spread mayo on both sides of two slices of bread. Place a slice of bread in the bush pie pan. Add half of cheese. Layer on cherry tomato halves, leaving room in between, and add avocado among the tomato. Layer on bacon and onion, then Sriracha, basil and salt. Add remaining cheese on top. Place second slice of bread on top and close the pan.
- Place bush pie pan six inches above hot coals on camp fire for about five to seven minutes on each side or until golden brown. After both sides are browned, remove from heat and carefully take out of the pan. Allow to cool for at least five minutes before eating.
