Ingredients

1   cup cherry tomatoes, halved
1   cup watermelon, diced ½ inch
½   teaspoon salt
2   tablespoons pine nuts, toasted
8   mint leaves, chopped
8   basil leaves, chopped
2   tablespoons CO-OP GOLD Balsamic Vinegar of Modena
1   cup arugula
  cup crumbled goat cheese

 

Directions

In a bowl, toss together the tomatoes, watermelon and salt. Let sit for about 10 mins and drain off excess liquid. In a dry bowl, add tomatoes and watermelon, pine nuts, mint, basil and balsamic vinegar. Coat well.

To serve, place a light bed of arugula on a serving plate. Add the tomato and watermelon mixture and top with goat cheese. Serve chilled. Serves two.
