Tomato and Watermelon Salad

Ingredients
| 1 | cup cherry tomatoes, halved | |
| 1 | cup watermelon, diced ½ inch | |
| ½ | teaspoon salt | |
| 2 | tablespoons pine nuts, toasted | |
| 8 | mint leaves, chopped | |
| 8 | basil leaves, chopped | |
| 2 | tablespoons CO-OP GOLD Balsamic Vinegar of Modena | |
| 1 | cup arugula | |
| ⅓ | cup crumbled goat cheese |
Directions
In a bowl, toss together the tomatoes, watermelon and salt. Let sit for about 10 mins and drain off excess liquid. In a dry bowl, add tomatoes and watermelon, pine nuts, mint, basil and balsamic vinegar. Coat well.
To serve, place a light bed of arugula on a serving plate. Add the tomato and watermelon mixture and top with goat cheese. Serve chilled. Serves two.
