Thai-Marinated Pork Back Ribs

Ingredients
| 4 | limes juiced, approximately six tablespoons of juice | |
| 2 | tablespoons lemon grass, grated | |
| 2 | tablespoons ground ginger | |
| 1 | tablespoon garlic, minced | |
| ½ | bunch cilantro, roughly torn | |
| 4 | tablespoons brown sugar | |
| 3 | tablespoons fish sauce | |
| 4 | tablespoons soy sauce | |
| 2-3 | pork rib racks |
Directions
In a medium mixing bowl, combine all ingredients except for the ribs. Whisk thoroughly to combine. Marinate the ribs in the mixture for a minimum of four hours or preferably overnight. Remove ribs from marinade and shake off any excess. Bake in a 320° F oven for one to 1.5 hours or until an internal temperature of 71° C (160° F) is reached. Alternately, you can grill them over high heat for 10 minutes on each side for a different, but equally delicious, option. Finish the ribs with a sprinkling of fresh cilantro.
