Thai Granola Cup

Ingredients
| 1 | over-ripe banana | |
| ¼ | cup CO-OP GOLD Coconut Peanut Spread | |
| ½ | cup CO-OP GOLD Greek Yogurt, low fat if desired | |
| 1 | lime, zest and juice | |
| 1 | tablespoon CO-OP GOLD Honey | |
| 1 | tablespoon cilantro, chopped | |
| honey to taste | ||
| ¼ | cup CO-OP GOLD Cashews, toasted and chopped | |
| ¼ | cup CO-OP GOLD Coconut, toasted | |
| ¼ | cup CO-OP GOLD PURE Granola (flavor of your choice) | |
| ½ | cup CO-OP GOLD Toasted Peanuts |
Directions
Mash banana and mix together thoroughly with coconut peanut spread until smooth mixture forms. Set aside.
Combine yogurt, lime zest and juice, honey and cilantro. Stir together until evenly mixed. Adjust sweetness with additional honey if desired. Set aside.
In medium bowl, combine chopped cashews, coconut and granola. Mix until evenly combined.
To assemble, spoon a layer of banana spread in the bottom of a glass, and top with a layer of toasted peanuts. Spoon on desired amount of yogurt mixture and top with a layer of granola. These can be made the night before for a quick and delicious breakfast-on-the-go. Serves four.
