Ingredients

2   tbsp (30 mL) CO-OP CENTSIBLES Canola Oil
1   cup (300 g) CO-OP Garlic Pork Sausage Meat
1   cup (140 g) medium diced onion
1   cup (140 g) medium diced red pepper
1   cup (170 g) CO-OP GOLD Black Beans
  tsp (9 g) ground cumin
½   tsp (3 g) salt
10   CO-OP CENTSIBLES Eggs
2   cups (240 g) CO-OP GOLD Shredded Tex-Mex Cheese
8   large DEMPSTER’S Tortillas

  • Place a large nonstick frying pan on medium-high heat, add oil and allow to heat up. Add sausage meat to the pan, breaking it up with a wooden spoon as you cook it. Once the sausage is cooked, add onion and green peppers to the pan and cook for about 3 minutes. Next, add black beans, cumin and salt. Mix and cook for 1 more minute. Take the mixture out of the pan and let cool.
  • Crack and whisk eggs in a bowl. Place the nonstick pan back on the stove on medium heat and add eggs to the pan. Turn heat to low and add sausage and vegetable mix. Using a rubber spatula, stir the eggs once to make sure they aren’t stuck, then cook on low. Once eggs are cooked, run spatula around and under the eggs and turn them onto a cutting board or tray.
  • Let the egg mixture fully cool, then cut into 8 – 10 rectangle strips about 3 inches long.
  • Lay tortillas on the counter. Evenly divide shredded Tex-Mex cheese between tortillas, laying a strip in the middle of each. Place egg rectangle on the cheese and wrap, starting with folding in the ends and then rolling up tight. These are great on their own, but even better with Co-op Gold salsa and sour cream.
  • If you’re preparing these to freeze, wrap each burrito in plastic wrap. Keep fresh in the fridge or freeze for an easy breakfast or snack. Heat in the microwave from frozen for 1½ – 2 minutes, or bake in the oven at 330°F for 15 minutes.
