Ingredients
| 2 | butternut squash | |
| 2 | cups thinly sliced white onion | |
| ½ | cup melted CO-OP CENTSIBLES Butter | |
| 1 | tsp salt | |
| ½ | tsp ground nutmeg | |
| 1 | tsp fresh thyme | |
| ½ | cup grated CO-OP GOLD Parmesan |
Directions
Prep time: 10 minutes
Total time: 1 hour, 5 minutes
Serves: 8
- Preheat oven to 415°F.
- Peel, seed and cut ¼-inch slices of the squash. Toss in a large bowl with sliced onions, melted butter, salt, nutmeg and thyme.
- Layer in the bottom of a 9 by 12-inch casserole dish. Cover with foil and bake for 40 minutes. After 40 minutes, take foil off and sprinkle Parmesan over the top. Bake for another 15 minutes or until the top is golden brown.
