Ingredients
| ½ | cup CO-OP GOLD Red Wine Vinegar | |
| 1 | teaspoon sriracha sauce | |
| 1 | teaspoon fresh garlic, minced | |
| 2 | teaspoons sugar | |
| 1¼ | tablespoons lime juice | |
| ½ | teaspoon lime zest | |
| 1 | teaspoon smoked paprika | |
| ¼ | cup CO-OP GOLD Extra Virgin Olive Oil | |
| 3½ | cups grape tomatoes, halved | |
| ½ | cup red onion, diced | |
| ¾ | cup red pepper, chopped | |
| ¼ | cup fresh basil, torn | |
| ¼ | cup fresh cilantro, torn | |
| 1 | teaspoon salt |
Directions
Serves: 6
Prep Time: 15 minutes
Marinate Time: 20 minutes
Whisk together vinegar, sriracha, garlic, sugar, lime juice, lime zest, paprika and olive oil in a bowl.
Combine tomatoes, onion, pepper, basil, cilantro and salt in a large bowl. Add dressing and toss well. Marinate for 20 minutes before serving.
