Spiced Grilled Street Corn
Ingredients
4   corn on the cob, husk on
3   tablespoons CO-OP GOLD Garlic Butter
1   teaspoon salt
¼   cup mayonnaise
¼   cup sour cream
1   teaspoon ground cumin
1   teaspoon smoked paprika
1   tablespoon fresh cilantro, chopped
¼   teaspoon lime zest
1   teaspoon lime juice
2   tablespoons CO-OP MARKET TOWN Feta Cheese

  • Pre-heat the grill to medium.
  • Prep the corn by pulling the husk down on all sides without removing it. Fold the loose ends of the husk up towards the bottom stem so it forms a small handle at the end of the cob. Tie butcher string or twine tightly around the folded husk.
  • Spread butter over the cobs to cover the kernels and season with salt. Put corn on the grill, leaving flare-up room between each. Roll each cob 90 degrees after one minute until lightly charred all the way around, about five minutes.
  • As soon as the cobs come off the grill, spread mayonnaise then sour cream on all the kernels. Sprinkle with remaining ingredients and serve.
