Spiced Grilled Street Corn
Ingredients
4 | corn on the cob, husk on | |
3 | tablespoons CO-OP GOLD Garlic Butter | |
1 | teaspoon salt | |
¼ | cup mayonnaise | |
¼ | cup sour cream | |
1 | teaspoon ground cumin | |
1 | teaspoon smoked paprika | |
1 | tablespoon fresh cilantro, chopped | |
¼ | teaspoon lime zest | |
1 | teaspoon lime juice | |
2 | tablespoons CO-OP MARKET TOWN Feta Cheese |

- Pre-heat the grill to medium.
- Prep the corn by pulling the husk down on all sides without removing it. Fold the loose ends of the husk up towards the bottom stem so it forms a small handle at the end of the cob. Tie butcher string or twine tightly around the folded husk.
- Spread butter over the cobs to cover the kernels and season with salt. Put corn on the grill, leaving flare-up room between each. Roll each cob 90 degrees after one minute until lightly charred all the way around, about five minutes.
- As soon as the cobs come off the grill, spread mayonnaise then sour cream on all the kernels. Sprinkle with remaining ingredients and serve.
