Spiced Ginger Beef
Ingredients
| 1 | cup water | |
| ¼ | teaspoon salt | |
| ½ | cup LUCKY DRAGON Jasmine Rice | |
| 0.5 | kilograms CO-OP Stirfry Beef | |
| 1½ | tablespoons cornstarch | |
| 3 | tablespoons vegetable oil | |
| 1 | cup shredded carrot | |
| ½ | cup (3) green onions | |
| ½ | teaspoon (1 clove) garlic, minced | |
| 1 | teaspoon ginger, minced | |
| 1¾ | tablespoons white vinegar | |
| 1½ | tablespoons LUCKY DRAGON Soya Sauce | |
| 1½ | tablespoons honey | |
| 1¼ | teaspoons SRIRACHA Hot Chili Sauce |
Directions
Serves: 2
Prep and cook time: 20 minutes
- In a small sauce pot, bring water and salt to a boil. Add rice to boiling water, cover and turn down to low and simmer for 15 minutes. Remove from burner and let sit covered for five minutes.
- Mix sliced beef and cornstarch in a bowl.
- Place a large frying pan on medium-high heat, add vegetable oil and heat until it shimmers. Carefully place slices of beef into the pan, making sure they don’t stick together. Brown both sides, being careful of the spitting oil.
- When both sides are golden, add carrot and cook for one minute. Add onion, ginger and garlic and cook for one more minute, tossing so it does not stick.
- In a bowl, whisk together vinegar, soy, honey and Sriracha. Add to the beef and toss well for about 30 seconds. Serve over rice.
