Simple Vegan Chili
Ingredients

| 1 | cup green pepper, medium dice | |
| 1 | cup red pepper, medium dice | |
| 1 | cup red onions, medium dice | |
| 2 | cups button mushrooms, chopped | |
| 2 | tablespoons garlic, chopped | |
| ¼ | cup CO-OP GOLD Chili Powder | |
| 3 | tablespoons smoked paprika | |
| 2 | cups tomatoes - medium dice | |
| 1 | can (540 millilitres) CO-OP GOLD PURE No-Salt Kidney Beans | |
| 1 | can (540 millilitres) CO-OP GOLD PURE No-Salt Black Beans | |
| 1 | can (398 millilitres) CO-OP GOLD Beans in Tomato Sauce | |
| 1 | can (796 millilitres) CO-OP GOLD Crushed Tomatoes | |
| 2 | cups water | |
| 2 | teaspoons salt | |
| 1 | teaspoon black pepper | |
| 1 | pack (390 grams) GARDEIN Beefless Ground |
Directions
Prep Time: 10 minutes
Cook Time: 1 hour
Serves: 8
- Place a large stock pot on medium-high heat. Add oil and heat until shimmering, then add peppers, onion and mushrooms and cook for five minutes. Add garlic, chili powder and paprika and cook for one to two more minutes. Turn heat down to low-medium, and add all other ingredients except beefless ground.
- Let lightly simmer with a lid on for 45 minutes, stirring from time to time so chili doesn’t stick to the bottom of the pot. Add beefless ground and cook for another 15 minutes. Add more water if it’s too thick.
