Salted Caramel Dip with Puff-Cheddar Sticks
Ingredients

| ½ | cup sugar | |
| ¼ | cup butter | |
| ¼ | cup whipping cream | |
| ½ | teaspoon salt | |
| ¼ | teaspoon vanilla extract | |
| ⅛ | teaspoon ground nutmeg | |
| ⅛ | teaspoon ground cinnamon | |
| ½ | tablespoon lemon juice | |
| 2 | Granny Smith apples, peeled, cored and cut into small chunks | |
| 2 | medium to firm pears, cut into small chunks | |
| Pastry: | ||
| 1 | sheet (200 g) frozen puff pastry, thawed | |
| ⅓ | cup finely grated CO-OP GOLD Old Cheddar | |
| apple slices | ||
| pear slices | ||
Directions
Prep time: 15 minutes
Total time: 45 minutes
Serves: 6 as a snack
- Put the water and sugar in a medium pot over medium heat. Stir until sugar dissolves. When the sugar starts to caramelize, add butter and cream carefully—it will splatter. Whisk well and cook for one minute.
- Add remaining ingredients and cook on low heat for about five minutes, or until apples are soft. Transfer to a blender and puree until smooth. Place in a bowl and set aside to cool.
- Preheat oven to 375° F. Unroll sheet of puff pastry and cut into half-inch by three-inch strips. Line a baking sheet with parchment paper. Transfer the pastry to the sheet. Sprinkle cheese all over the pastry and bake for 15–20 minutes, or until lightly brown. Let cool.
- Serve apple slices, pear slices and pastry with dip.
