Ingredients

Dip:
2   tablespoons water
½   cup sugar
¼   cup butter
¼   cup whipping cream
½   teaspoon salt
¼   teaspoon vanilla extract
  teaspoon ground nutmeg
  teaspoon ground cinnamon
½   tablespoon lemon juice
2   Granny Smith apples, peeled, cored and cut into small chunks
2   medium to firm pears, cut into small chunks
Pastry:
1   sheet (200 g) frozen puff pastry, thawed
  cup finely grated CO-OP GOLD Old Cheddar

Directions

Prep time: 15 minutes
Total time: 45 minutes
Serves: 6 as a snack

  • Put the water and sugar in a medium pot over medium heat. Stir until sugar dissolves. When the sugar starts to caramelize, add butter and cream carefully—it will splatter. Whisk well and cook for one minute.
  • Add remaining ingredients and cook on low heat for about five minutes, or until apples are soft. Transfer to a blender and puree until smooth. Place in a bowl and set aside to cool.
  • Preheat oven to 375° F. Unroll sheet of puff pastry and cut into half-inch by three-inch strips. Line a baking sheet with parchment paper. Transfer the pastry to the sheet. Sprinkle cheese all over the pastry and bake for 15–20 minutes, or until lightly brown. Let cool.
  • Serve apple slices, pear slices and pastry with dip.
