Ingredients

Syrup
2   cups water
2   cups CO-OP Pomegranate Arils, and extra for garnish
2   cups granulated sugar
Cocktail
½   ounce white rum
¾   ounce pomegranate syrup
¾   ounce lime juice
2   ounces CO-OP GOLD Apple Orange Peach Juice
2   ounces CO-OP GOLD Sweetened Apple Sauce
8   mint leaves
¾   ounce CO-OP Club Soda

Directions

Total time: 20 minutes
Serves: 1

  • Make the syrup by combining water and pomegranate arils in a small pot. Bring to a boil, add sugar and whisk until the sugar crystals dissolve. Remove from heat and let steep for 15 minutes, then strain the syrup and refrigerate until needed.
  • In a cocktail shaker, add rum, pomegranate syrup, lime juice, apple orange peach juice, apple sauce and mint. Shake vigorously and strain into a short glass.
  • Add ice and garnish with apple slices, sprig of mint, and a few pomegranate arils.
