Roasted or Air Fried Brussels Sprout Salad
Ingredients
| 4 | cups Brussels sprouts, core and outer leaves removed | |
| ¼ | cup toasted pistachios, chopped | |
| ¼ | cup capers | |
| ¼ | cup shallot, minced | |
| 2 | cloves garlic, crushed | |
| 2 | tbsp CO-OP GOLD Extra Virgin Olive Oil | |
| Juice from half a lemon | ||
| 1 | tsp sea salt | |
| ½ | tsp CO-OP GOLD black pepper | |
| ¼ | tsp CO-OP GOLD red pepper flakes | |
| ¼ | cup chopped mint | |
| ¼ | cup chopped parsley |

Prep Time: 15 minutes
Total Time: 1 hour 15 minutes
- If using an air fryer, preheat to 400°F. If using an oven, preheat to 375°F. For easy cleanup, line air fryer or baking sheet with parchment paper.
- Put half the Brussels sprouts into the air fryer and cook for 7–9 minutes. Shake often to avoid sticking. Remove and cover lightly with foil to keep warm. Repeat with the second half. Once cooked, transfer to a large bowl and toss with the remaining ingredients.
- If using an oven, toss the Brussels sprouts with the olive oil, salt and black pepper. Spread in a single layer on the baking sheet and roast uncovered for 45 minutes to an hour, depending on the size of the sprouts, turning once or twice. Add remaining ingredients and serve.
