Red-Wine Braised Cabbage

Ingredients
| ¼ | cup vegetable oil | |
| 8 | cups red cabbage, sliced | |
| 1½ | cups Granny Smith apples, matchstick cut | |
| 2 | cups white onion, finely sliced | |
| 1 | cup carrot, grated | |
| ⅔ | cup brown sugar | |
| 3 | cups red wine | |
| 1 | cup red wine vinegar | |
| 1 | teaspoon ground allspice | |
| 1 | teaspoon ground nutmeg | |
| ¼ | teaspoon ground cinnamon | |
| 2 | teaspoons salt |

Cook time: 2 hours
In a large pot over medium heat, add first five ingredients and sweat for about five to eight minutes, stirring often. Add remaining ingredients and bring the pot to a boil. Then reduce heat to a light simmer and cover with a lid. Continue cooking for about 90 minutes over low heat while covered, stirring every so often. Take lid off and continue to cook for another 30 minutes until all the liquid is gone and cabbage is nicely glazed. Serve warm. It may be refrigerated for up to two weeks.
