Ingredients
| 1 | medium long English cucumber, peeled, cut in half and seeds scooped out | |
| 1 | tablespoons cumin seed, toasted and crushed | |
| 1 | clove of garlic, minced finely | |
| 4 | tablespoons mint, chopped | |
| 2 | cups low-fat Greek yogurt | |
| 1 | lemon, zest and juice | |
| salt, to taste |
Directions
Grate the cucumber on a box grater. Transfer to a bowl, lightly season with salt and set aside for 20 minutes to draw out the excess moisture. Lightly squeeze out most of the remaining water and transfer to a new bowl. Combine with remaining ingredients. Season with salt.
