Ingredients

1   lb ground pork
¼   cup diced onion
1   tsp minced garlic
1   tbsp CO-OP GOLD Taco Seasoning
4   tbsp CO-OP GOLD Medium Salsa, divided
½   tsp ground cumin
½   tbsp minced jalapeño
¼   cup chopped cilantro
4   10-inch flour tortillas
¾   cup CO-OP GOLD Tex Mex Shredded Cheese Blend

Chef’s Tip: Pair these tasty quesadillas with Co-op Gold Tortilla Chips for a perfect side.

1. Cook the pork filling
Heat a griddle to medium-high. Add ground pork, diced onion, minced garlic and taco seasoning and cook until the pork is browned. Stir in two heaping tablespoons of the salsa, then transfer to a bowl.

2. Season the mixture
Add cumin, minced jalapeño and cilantro to the pork mixture. Mix well and set aside.

3. Prepare the quesadilla
Wipe the griddle clean with a paper towel and return it to medium heat. Place one tortilla on the griddle, then top with half of the pork mixture and half of the shredded cheese. Place a second tortilla on top and press down gently.

4. Cook and flip
Cook for 2–3 minutes, pressing occasionally with a spatula, until the bottom is golden brown. Flip the quesadilla and cook the other side until browned.

5. Serve
Transfer to a cutting board, slice into eight wedges and serve with remaining salsa and sour cream.
