Pork Quesadilla

Ingredients

| 1 | tsp minced garlic | |
| 1 | tbsp CO-OP GOLD Taco Seasoning | |
| 4 | tbsp CO-OP GOLD Medium Salsa, divided | |
| ½ | tsp ground cumin | |
| ½ | tbsp minced jalapeño | |
| ¼ | cup chopped cilantro | |
| 4 | 10-inch flour tortillas | |
| ¾ | cup CO-OP GOLD Tex Mex Shredded Cheese Blend | |
| CO-OP GOLD Sour Cream |

1. Cook the pork filling
Heat a griddle to medium-high. Add ground pork, diced onion, minced garlic and taco seasoning and cook until the pork is browned. Stir in two heaping tablespoons of the salsa, then transfer to a bowl.
2. Season the mixture
Add cumin, minced jalapeño and cilantro to the pork mixture. Mix well and set aside.
3. Prepare the quesadilla
Wipe the griddle clean with a paper towel and return it to medium heat. Place one tortilla on the griddle, then top with half of the pork mixture and half of the shredded cheese. Place a second tortilla on top and press down gently.
4. Cook and flip
Cook for 2–3 minutes, pressing occasionally with a spatula, until the bottom is golden brown. Flip the quesadilla and cook the other side until browned.
5. Serve
Transfer to a cutting board, slice into eight wedges and serve with remaining salsa and sour cream.
