Ingredients

2   tbsp vegetable oil
1   onion, medium dice
1   red pepper, medium dice
½   cup frozen corn kernels or 1 can whole kernel corn
2   tbsp finely chopped jalapeño
1   tbsp finely minced fresh garlic
  tsp CO-OP GOLD Ground Cumin
  tbsp CO-OP GOLD Smoked Paprika
2   tsp salt
1   can (540ml) CO-OP GOLD Diced Stewed Chili Style Tomatoes
1   can (540ml) CO-OP GOLD Six Bean Mix
3   cups water
1   cup GARDEIN Plant-Based Ground Be’f
Garnish
  cups VITALITE Plant-Based Cheddar Flavoured Shreds
3   cups CO-OP GOLD Nacho Flavoured Tortilla Chips (optional)
¼   cup chopped fresh cilantro
1   lime, cut into wedges

Directions

Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
Serves: 4-6


  • Place a large pot on medium-high heat. Add oil and heat. Add onion and peppers and cook for about 5 minutes, allowing a bit of colour to form.
  • Next, turn heat down to medium and add corn, jalapeño, garlic, cumin, paprika and salt. Cook for 2 minutes and then add canned tomatoes, beans and water.
  • Turn heat down to low and bring to a simmer. Cover and cook for 45 minutes, stirring regularly.
  • Add ground be’f, cover and simmer for 5 more mins.
  • To serve, ladle into a bowl and garnish with cheddar flavoured shreds, tortilla chips and/or cilantro. Serve a lime wedge on the side and add as you like.
