Piri Piri Burgers

Ingredients
1 ¼   lbs ground beef
3   tablespoons piri piri seasoning blend
1   onion, cut into thick rings
4   eggs (1 fried egg per portion)
Piri Piri Seasoning Blend
2   teaspoons CO-OP GOLD Cinnamon, ground
½   teaspoon cardamom, ground
2   teaspoons brown sugar
2   tablespoons CO-OP GOLD Paprika
1   teaspoon CO-OP GOLD Cayenne
1   teaspoon CO-OP GOLD Garlic Powder
Condiment
1   lime, juiced and zested
½   cup CO-OP GOLD Mayonnaise
1   tablespoon rosemary, very finely chopped

 

Directions

Preheat grill to high heat.

Piri Piri Seasoning Blend

Combine all ingredients for the seasoning blend in a small bowl and stir to combine.

Place ground beef in a medium-sized mixing bowl and season with three tablespoons of the piri piri seasoning blend. Mix thoroughly to combine. Form the mixture into four even-sized patties, pressing firmly to force out any excess air. Grill on medium-high heat until fully cooked to an internal temperature of 71° C (160° F), about five minutes each side. Grill onion rings until tender.

Condiment

While the burgers and onions are grilling, make the condiment. Combine lime juice, zest, mayonnaise and rosemary in a small bowl and stir to combine.

To assemble, dress the grilled patties with the condiment. Top with grilled onions and fried egg. Serves four.
