1 | tablespoon CO-OP GOLD PURE Organic Sesame Oil | |
¼ | cup vegetable oil | |
2 | cups broccoli, one-inch pieces | |
1 | cup red onions, medium sliced | |
¼ | cup CO-OP GOLD Peanuts, toasted | |
Sauce | ||
¼ | cup CO-OP GOLD Smooth Peanut butter | |
¼ | cup SAMBAL OELEK Chili Paste | |
1 ½ | cups JOYYA 2% Ultrafiltered Milk | |
2 | tablespoons lime juice | |
½ | teaspoon ground cumin |

Cook Time: 30 minutes
Serves: 4
- Place chicken with ginger, garlic, soya sauce and sesame oil in a bowl and mix well. Marinate for two hours in the fridge.
- Mix all sauce ingredients with a whisk and set aside for later.
- Once the chicken has marinated, place a large frying pan on medium-high heat and add vegetable oil. Allow to heat up. Add chicken without overlapping so all pieces can brown. Flip chicken after two minutes and cook other side.
- Next, add broccoli and onions to pan and sauté for three to four minutes. Turn heat down to low and add sauce. Allow to simmer with a lid on for five to eight minutes. Add more milk if sauce is too thick. Serve over steamed rice and garnish with toasted peanuts.
