Parmesan Zucchini Fritters
Ingredients

cup grated Parmesan cheese, divided | |

| 2 | tablespoons vegetable oil |

Cook Time: 15 minutes
Preheat oven to 350°F.
Grate zucchini on the coarse side of a box grater. Place in a clean dish towel; then squeeze out excess water. In a medium mixing bowl, combine zucchini, ½ cup Parmesan and remaining ingredients excluding oil and reserved Parmesan. Mix until thoroughly combined.
Heat a large frying pan over medium heat. Add oil, and when hot, drop ¼ cup of batter into the pan for each fritter. Flatten with a spatula until ¼ inch thick, and cook until underside is golden brown. Flip to cook on the other side for one to two minutes, until golden brown.
Transfer fritters to a baking sheet, and bake for approximately ten minutes until cooked through. Garnish with reserved ¼ cup Parmesan cheese. Serve warm.
