Ingredients

  cups ground turkey meat
½   cup red onion
½   cup dried apricots, diced
1   Envy or Granny Smith apple, diced
1   tablespoon garlic, minced
3   cups CO-OP GOLD chicken stock
  teaspoons Chinese Five Spice blend
8   cups dried bread cubes
  tablespoons sage
2   tablespoons parsley

 

Directions

Preheat the oven to 350° F. In a medium-sized sauté pan over medium high heat, begin lightly browning the turkey meat in a splash of oil. When the meat is browned, add the onion, apricots, apple and garlic. To the sauté pan, add half the chicken stock and the Five Spice blend. Continue cooking over medium heat for approximately ten minutes or until reduced by half. Remove from heat and allow the mix to cool slightly.

Transfer the mixture to a large mixing bowl. Add the bread cubes, sage, parsley and remaining chicken stock to the cooked mixture. Gently stir to combine and moisten the stuffing. When the mixture is evenly combined, mound the mixture in lined or lightly greased muffin tins.

Bake the stuffing in the oven for approximately 15 minutes, until the stuffing has browned on top, but is still moist inside.
