Ingredients
Cookies
| ½ | cup hard margarine (or butter), softened | |
| 1 | cup granulated sugar | |
| ½ | cup CO-OP GOLD Cocoa, sifted if lumpy | |
| 2 | large eggs | |
| 1 | teaspoon vanilla | |
| 2 | cups CO-OP GOLD Enriched All Purpose Flour | |
| 1 ½ | teaspoons baking soda | |
| ½ | teaspoon baking powder | |
| ½ | teaspoon salt | |
| 1 | cup milk |
Cool Chocolate Filling
| 2 | envelopes of dessert topping (not prepared) | |
| 1 | box of CO-OP GOLD instant chocolate pudding powder (four-serving size) | |
| 1 ½ | cups cold milk | |
| assorted candies for decorating |
Directions
Cookies
Cream margarine and sugar in large bowl. Add cocoa. Beat well. Add eggs one at a time, beating well after each addition. Add vanilla. Beat well.
Combine next four ingredients in a medium bowl. Add to margarine mixture in three additions, alternating with milk in two additions, beginning and ending with flour mixture, beating well after each addition. For each cookie, use three tablespoons of batter and drop about four inches apart onto greased cookie sheets. Bake in 425º F (220º C) oven for about 10 minutes until puffed and firm. Let stand on cookie sheets for five minutes before removing to wire racks to cool completely.
Cool Chocolate Filling
In a separate bowl, beat dessert topping, pudding powder and cold milk for about five minutes until spreading consistency. Makes 2 ⅔ cups filling. Slice each cookie in half horizontally. Spread two tablespoons filling on bottom half of each cookie. Cover with top halves. Press each cookie gently until a small amount of filling oozes out between layers. Press candies into filling to create “monster” faces.
Makes about two dozen cookies.
