Maple Sausage Mini Frittatas

Ingredients
| 3 | CO-OP GOLD Eggs | |
| 6 | CO-OP GOLD Egg Yolks | |
| 1 ½ | tablespoons dill, finely chopped | |
| ⅔ | cup green onions, finely chopped | |
| ¼ | teaspoon black pepper | |
| ½ | tablespoon salt | |
| ½ | tablespoon smoked paprika | |
| 6 | CO-OP GOLD Maple Sausages | |
| 1 | cup white cheddar cheese, finely grated |
Directions
Preheat oven to 350°.
Cook sausages according to package instructions or until hot and internal temperature reaches 74°C (165°). Remove and cut into ½ inch pieces.
Whisk first seven ingredients together in a medium bowl. Lightly spray mini muffin tray with oil and fill ⅔ full with egg mixture.
Place one sausage piece in each and top with cheddar cheese.
Bake for 12-15 minutes. Serve warm or let cool and reheat at a later time. Also delicious served at room temperature.
