Ingredients

3   CO-OP GOLD Eggs
6   CO-OP GOLD Egg Yolks
1 ½   tablespoons dill, finely chopped
  cup green onions, finely chopped
¼   teaspoon black pepper
½   tablespoon salt
½   tablespoon smoked paprika
6   CO-OP GOLD Maple Sausages
1   cup white cheddar cheese, finely grated

Directions

Preheat oven to 350°.

Cook sausages according to package instructions or until hot and internal temperature reaches 74°C (165°).  Remove and cut into ½ inch pieces.

Whisk first seven ingredients together in a medium bowl.  Lightly spray mini muffin tray with oil and fill ⅔ full with egg mixture.

Place one sausage piece in each and top with cheddar cheese.

Bake for 12-15 minutes.  Serve warm or let cool and reheat at a later time.  Also delicious served at room temperature.
