Ingredients

3-3.5 kg   CO-OP GOLD Naturally Smoked Holiday Ham
Glaze
  cup CO-OP® GOLD Balsamic Vinegar of Modena
1   cup CO-OP GOLD PURE® Organic Maple Syrup
1   teaspoon star anise seed
½   tablespoon fennel seed
10   cloves
10   whole all spice
3   tablespoons grainy mustard
Applesauce
2 ½   cups granny smith apples- peeled, cored and cut into large dice
¼   cup brown sugar
½   lemon, peel only, sliced
3   tablespoons lemon juice
¼   teaspoon cinnamon, ground
  cups water

Directions

Preheat oven to 400°F.

Place all glaze ingredients, excluding the grainy mustard, in a small saucepot over medium heat. Simmer gently, and cook until reduced by half. Strain glaze and discard spices. Add grainy mustard to glaze and set aside.

Lightly score the skin of the ham in a crosshatch pattern every ½” with a sharp knife.

Place ham, fat side up, on a rack in a roasting pan. Pour approximately 4 cups of water into the bottom of the roasting pan. You may need to add more as it cooks and the water evaporates. Brush ham with glaze.

Transfer to the oven and roast for 15 minutes. Reduce the heat to 300°F and continue to roast for an additional 1 ½ hours or until internal temperature reaches of 71°C (160°F). Baste ham using a pastry brush every 10 to 15 minutes while roasting.

Let rest for 30 minutes before serving.

To make the applesauce, place all sauce ingredients in a medium sized pot over medium heat, and cover. Cook for 20-25 minutes stirring occasionally. When apples are soft and thoroughly cooked, remove lid and continue cooking until  excess liquid has evaporated. Lightly whisk the sauce until a rustic, chutney like consistency is reached. Let cool and serve with ham.
