Ingredients

1   tablespoon vegetable oil
1   CO-OP Signature Smokehouse Mennonite Sausage, uncooked, removed from casing
1   cup onion, diced
6   sprigs fresh thyme
1   clove garlic, cut in half

  Peel of 1 lemon, sliced into 8 pieces
6   whole cloves
8   whole allspice

  teaspoon ground black pepper

  cups CO-OP GOLD Chicken Broth or turkey drippings

  tablespoons butter

  tablespoons CO-OP GOLD Enriched Flour

Cook Time: 30 minutes

Heat oil in a large frying pan over medium to high heat. Add sausage, and brown on all sides. Add onion, thyme, garlic, lemon peels, cloves, allspice and pepper. Cook for three minutes. Add stock and stir with a wooden spoon, scraping up all the seared brown bits on the bottom of the pan. Simmer for 15 minutes; then strain off stock into a container. You may wish to save the sausage meat for stuffing or chopped up for gravy later if you like a chunky sausage gravy.

Heat butter In a medium-sized saucepan over medium heat. Once butter is melted, add flour, stirring with a wooden spoon. Cook for about three minutes over medium heat, stirring often until lightly browned. Reduce heat to low. Add about a ¼ cup of stock at a time to the flour mixture while whisking to incorporate and avoid lumps. Once all stock is added and whisked well, simmer for five minutes on low. The consistency of the gravy can be adjusted with a little water.

If making the day before, cool and store in refrigerator overnight. Reheat before serving.
