Lentil Soup in a Jar
Ingredients
| 1 | cup split red lentils | |
| 2 | tablespoons sundried tomato (chopped) | |
| ½ | cup whole green lentils | |
| 1 | tablespoon parsley | |
| 1 | packet onion soup mix | |
| 1 | bay leaf |
Directions
In a jar, place half a cup of split red lentils, followed by sundried tomato, half a cup of whole green lentils, parsley, onion soup mix, and the rest of the red lentils.
To make, add soup mix to five cups of water, bring to a boil, then cover with lid, and simmer 15-20 minutes until lentils reach desired tenderness.
Remove bay leaf and serve.
If your soup reduces, and becomes too thick, add additional water, or some vegetable broth.
