Lemon Herb Quinoa Salad

Ingredients

  cups CO-OP GOLD PURE Quinoa
2 ¼
  cups water

  Tbsp fresh mint, leaves only, chopped
2
  Tbsp fresh basil, leaves only, chopped

  cherry tomatoes, halved

  cup finely diced red onion
1   tsp finely grated lemon zest

  Tbsp lemon juice

  Tbsp olive oil
½
  tsp salt
Directions

Serves 4 as a side
Prep Time: 5 minutes
Total Time: 17 minutes

  1. Place water and quinoa in a medium pot. Bring to a boil over high heat. Reduce heat to a simmer, cover and cook for 8 to 9 minutes, until tender.
  2. When cooked, remove from heat and spoon into a mixing bowl to cool. Add all remaining ingredients into and mix well.
