Lemon Herb Quinoa Salad

Ingredients

cups CO-OP GOLD PURE Quinoa |

cups water |

Tbsp fresh mint, leaves only, chopped | |

Tbsp fresh basil, leaves only, chopped | |

cherry tomatoes, halved |

cup finely diced red onion |

Directions
Serves 4 as a side
Prep Time: 5 minutes
Total Time: 17 minutes
- Place water and quinoa in a medium pot. Bring to a boil over high heat. Reduce heat to a simmer, cover and cook for 8 to 9 minutes, until tender.
- When cooked, remove from heat and spoon into a mixing bowl to cool. Add all remaining ingredients into and mix well.
