Kale Salad with Hemp Seeds and Sesame

Ingredients

1 | tablespoon CO-OP GOLD PURE® Organic Toasted Sesame Oil | |
2 | tablespoons LUCKY DRAGON Soy Sauce | |
1 | teaspoon Sriracha sauce | |
2 | teaspoons fresh ginger, minced | |
½ | teaspoon fresh garlic, minced | |
4 | tablespoons rice wine vinegar | |
⅔ | cup vegetable oil | |
Salad | ||
4 | cups kale | |
½ | cup cucumber | |
⅔ | cup carrots | |
½ | cup radishes | |
½ | cup Granny Smith apples | |
⅓ | cup CO-OP GOLD PURE Hemp Seeds | |
3 | tablespoons sesame seeds | |
½ | teaspoon salt |
Directions
Place all dressing ingredients into a bowl and whisk well to combine.
Place kale in a large bowl and add a few teaspoons of dressing and pinch of salt. Massage the dressing into the kale until lightly softened. Cut the cucumber, carrots, radishes and apple into large matchsticks. In a separate bowl, mix all salad ingredients and dressing to taste. Toss the salad to combine evenly. To plate, split the kale evenly between bowls, top with the dressed salad and enjoy.
Serves 4 as a main or 8 as a side
