Ingredients
2   15-ounce cans CO-OP GOLD Organic Chick Peas, rinsed and drained
2   cloves garlic, minced
2   shallots, chopped
½   cup low-fat Greek yogurt
¼   cup water
3   lemons, zest and juice
3   tablespoons tahini sesame seed paste
5   tablespoons CO-OP GOLD Extra Virgin Olive Oil
    salt, to taste

 

Directions

In a medium pot add chick peas, garlic and shallots. Cover by one inch with water. Bring the pot to a steady simmer and continue cooking for 20 minutes. Remove from heat and drain. Transfer mixture to a food processor; add all the remaining ingredients except for the olive oil. Purée the mixture until smooth. With the motor still running, drizzle in the olive oil. Check the seasoning and adjust with a little more lemon juice and salt if required.
