Ingredients

Marinade and steak
  cup extra virgin olive oil
2   cloves garlic, minced
2   tbsp red wine vinegar
  cup soya sauce
¼   cup honey
½   tsp freshly ground black pepper
1   lb round steak
Dressing
¼   cup red wine vinegar
1   tbsp CO-OP GOLD Whole Grain Mustard
1   clove garlic, roughly chopped
5–6   basil leaves, torn
2–3   sprigs fresh parsley, torn
½   cup olive oil
Pinch   salt
  tsp black pepper
2   heaping tbsp CO-OP GOLD Argentinian Steak Sauce Chimichurri
Salad
4   cups mixed greens
1   ear of corn, peeled, gently boiled and cut off the cob
¼   cup sliced red onion
2   hard-boiled eggs, quartered
1   cup chopped tomatoes
½   cup cooked chopped bacon
½   avocado, sliced
  cup CO-OP Crumbled Feta

  Chopped chives and parsley to garnish

Directions

Prep time: 15 minutes
Total time: 25 minutes + marinating overnight
Serves: 4


1. Marinate the steak and mix dressing
Combine all marinade ingredients in a bowl. Place the round steak in a resealable bag or shallow dish and pour the marinade over it. Marinate overnight if possible: this helps tenderize the meat and enhances flavour. Mix together the salad dressing ingredients so the flavour improves as it sits overnight.

2. Grill the steak
Preheat your barbecue to high heat. Grill the steak to medium-rare, about 2–3 minutes per side. Remove from the grill and let rest for 10 minutes.

3. Assemble the salad
While the steak rests, arrange mixed greens and other salad ingredients in a pinwheel pattern on four plates.

4. Slice, garnish and serve
Slice the grilled steak thinly and divide among the four salads. Sprinkle with feta cheese and drizzle with prepared dressing.
