Grilled Halloumi Salad with Ginger lime Dressing
Ingredients

| ⅓ | cup lime juice | |
| ½ | tablespoon ginger, minced | |
| ½ | teaspoon chili flakes | |
| 1 | tablespoon CO-OP GOLD PURE Honey | |
| ⅓ | cup rice wine vinegar | |
| ¼ | cup vegetable oil | |
| 1 | cup fennel - Shaved | |
| 200 | grams halloumi, cut into ½-inch slices | |
| 2 | cups fresh peaches, pitted and sliced in sixes | |
| 2 | tablespoon fresh cilantro, ripped | |
| ¼ | teaspoon salt | |
| 1/8 | teaspoon black pepper, ground | |

Prep Time: 15 mins
Cook Time: 5 mins
- Blend lime juice, ginger, chili flakes, honey, vinegar and oil on high for one minute. Reserve dressing for later.
- Pre-heat grill on high. Grill each side of the halloumi to add dark grill marks, about one minute on each side. Place on a cutting board and cut into strips and place in a medium-sized mixing bowl. Add all other salad ingredients, dress and serve.
