Ingredients

2 ¼   cups CO-OP GOLD Enriched All Purpose Flour
½   teaspoon salt
1   teaspoon cinnamon
1   teaspoon baking powder
¼   teaspoon baking soda
¼   cup ground flax seeds
1   cup soft CO-OP GOLD Butter
1 ¾   cups brown sugar, loosely packed
2   eggs
1   teaspoon vanilla extract
3 ¼   cups granola cereal, such as Nature Valley Protein Granola

 

Directions

Preheat oven to 325° F. In a large bowl, stir together the flour, salt, cinnamon, baking powder, baking soda and flax seeds. In a separate bowl, cream together the butter and brown sugar with an electric mixer until light in colour. Add eggs one at a time, then the vanilla extract. Add to dry ingredients along with granola. Mix until just combined. Roll and cut into cookies or wrap in a log shape and freeze for later use. Bake for 10 to 14 minutes. Allow to cool on cookie sheet.
