Granola Flax Cookies

Ingredients
| 2 ¼ | cups CO-OP GOLD Enriched All Purpose Flour | |
| ½ | teaspoon salt | |
| 1 | teaspoon cinnamon | |
| 1 | teaspoon baking powder | |
| ¼ | teaspoon baking soda | |
| ¼ | cup ground flax seeds | |
| 1 | cup soft CO-OP GOLD Butter | |
| 1 ¾ | cups brown sugar, loosely packed | |
| 2 | eggs | |
| 1 | teaspoon vanilla extract | |
| 3 ¼ | cups granola cereal, such as Nature Valley Protein Granola |
Directions
Preheat oven to 325° F. In a large bowl, stir together the flour, salt, cinnamon, baking powder, baking soda and flax seeds. In a separate bowl, cream together the butter and brown sugar with an electric mixer until light in colour. Add eggs one at a time, then the vanilla extract. Add to dry ingredients along with granola. Mix until just combined. Roll and cut into cookies or wrap in a log shape and freeze for later use. Bake for 10 to 14 minutes. Allow to cool on cookie sheet.
