Ingredients

Mousse
1   cup whipping cream
¼   cup granulated sugar
1   CO-OP GOLD egg, yolk only
½   cup CO-OP GOLD Light Cream Cheese, softened
2   tablespoons CO-OP GOLD Lemon Juice
Pancakes
1   package CO-OP GOLD PURE Gluten-Free Pancake or Waffle Mix
Chocolate Shavings
1   CO-OP GOLD PURE 72% Cocoa Chocolate Bar

 

Directions

In medium mixing bowl, beat whipping cream until medium-firm peaks form. Set aside. In separate bowl, with an electric mixer or whisk, cream together sugar and egg yolk until pale and fluffy. Whisk in cream cheese until smooth. Stir in lemon juice, and then gently fold mixture into whipped cream. Refrigerate mixture until ready to use. Prepare pancakes according to package instructions.

To assemble: Top prepared pancakes with a dollop of mousse mixture. Then, using either a cheese grater or microplane, shave desired amount of chocolate over top. Serves four.
