Fried Egg and Smoked Salmon Blini

Ingredients
| 9 | CO-OP GOLD PURE Eggs, divided | |
| 1 | cup buttermilk | |
| 2 | tablespoons butter, melted | |
| ½ | cup all-purpose flour | |
| ½ | cup whole wheat flour | |
| 1 | teaspoon baking powder | |
| ½ | teaspoon baking soda | |
| ¼ | teaspoon salt | |
| 1 | teaspoon sugar | |
| vegetable oil | ||
| ¼ | cup sour cream | |
| 1 | cup CO-OP GOLD PURE Smoked Salmon, sliced | |
| 3 | tablespoons fresh dill, chopped | |
| ½ | cup green onions, thinly sliced |

Cook Time: 15 minutes
In a bowl, use a whisk to mix one egg with the buttermilk and melted butter until thoroughly combined. In a medium bowl, mix all-purpose flour, whole wheat flour, baking powder, baking soda, salt and sugar. Add the wet mixture to the dry ingredients and mix until just combined to create the blini batter.
Over medium heat, coat a large nonstick pan with a splash of vegetable oil. Pour just less than ¼ cup of the batter into the pan and flatten it like a pancake. Cook blini for about two minutes on each side until golden brown. Repeat until the batter is used up. To keep warm, place blini on a baking sheet and place in the oven on the lowest setting until ready to serve.
Fry remaining eight eggs over easy or to your liking.
Place each blini on its own plate and spread sour cream on top. Add smoked salmon and then one fried egg. Sprinkle dill and green onions on top and serve.
