Farmer Sausage with Dill and Apple Salad

  cups peeled and cored Granny Smith apples, divided
¼   cup CO-OP GOLD Apple Cider Vinegar
½   cup brown sugar
2   tablespoons CO-OP GOLD Chef’s Butter
¾   cup water
1   package (675 grams) CO-OP SIGNATURE SMOKEHOUSE Mennonite Style Farmer Sausage
  tablespoons olive oil
  tablespoons fresh dill, torn

Cook Time: 20 minutes

Cut four cups of the apples into ½-inch chunks. Place in a saucepot with apple cider vinegar, brown sugar, butter and water. Cook covered over medium-low heat for 10 minutes, stirring occasionally. Remove lid and continue to cook for another five to 10 minutes until apples are soft.

Preheat grill to medium-high heat. Grill sausage for three minutes on both sides, allowing grill marks to form. Place on top grill away from direct heat for another 12 to 15 minutes or until internal temperature reaches 160°F (71°C). Remove from heat and rest for 10 minutes before slicing.

Cut 1½ cups apple into large match sticks. Toss with oil and dill.

Spoon apple puree onto a plate. Top with grilled sausage and salad.
