Cucumber Smash Mocktail

Ingredients

| 1 | large Long English cucumber | |
| 2 | cups cold water | |
| 2 | cups white sugar | |

| 5 | bags CO-OP GOLD PURE Lemon Ginger Tea | |
| 2 | cups boiling water | |
| ¼ | cup CO-OP GOLD PURE Ginger Lemon Kombucha | |
| ½ | oz. lime juice | |
| ½ | cup cracked ice, divided | |
| Thinly sliced cucumber | ||
| Candied ginger | ||
Directions
- To make the syrup, roughly chop the cucumber and transfer it to a blender. Add water and blend until cucumber has broken down into a liquid form.
- Double strain into a container. Add sugar and whisk until dissolved. Measure out 1 oz. and set the rest aside for now.
- Steep teabags in boiling water for 5 minutes. Strain and chill. Measure out 1 oz. and set the rest aside for now.
- Measure into a cocktail shaker cucumber syrup, steeped tea, kombucha and lime juice. Take it from mocktail to cocktail by adding in 1 oz of gin. Add half the ice and shake vigorously. Strain into a rocks glass. Add remaining ice and kombucha to fill the glass.
- Garnish with skewered cucumber slices and candied ginger.
