Crispy Tofu Salad with Soy Ginger Dressing
Ingredients

| 2 | tbsp LUCKY DRAGON Soya Sauce | |
| 2 | tsp CO-OP GOLD PURE Liquid Honey | |
| 3 | cups 1-inch semi-firm tofu cubes | |
| ¼ | cup CO-OP GOLD Cornstarch | |
| 1 | tbsp oil | |
| Dressing | ||
| 2 | tbsp LUCKY DRAGON Soya Sauce | |
| 1 | tsp finely minced ginger | |
| 1 | tsp finely minced garlic | |
| 2 | tbsp lime juice | |
| 2 | tbsp CO-OP GOLD PURE Sesame Oil | |
| 2 | tbsp water | |
| Salad | ||
| 4 | cups ½ inch savoy or green cabbage slices | |
| 1 | cup CO-OP GOLD Frozen Corn Kernels | |
| 2 | cups ¼ inch cucumber slices | |
| 2 |
tbsp chopped cilantro | |
| ¼ | salt | |
Directions
Prep time: 10 minutes
Total time: 20 minutes
Serves: 4
- Mix soya sauce and honey. Pour over tofu cubes and stir. Let the tofu sit for at least 5 minutes. Next, add cornstarch and stir the tofu.
- Place a large non-stick pan over medium heat. Add oil and allow to heat up. Carefully add cubes of tofu and cook on all sides until browned and crispy. You may need two batches, depending on the size of your pan. Place tofu to the side to cool.
- Mix all dressing ingredients in a bowl. In a large serving bowl, toss dressing and all salad ingredients together. Add tofu on top.
