Chickpea Burger with Honey Curry Mayonnaise

Ingredients

| 2 | cans (540 mL) CO-OP GOLD Chickpeas | |
| 1 | cup minced red onion | |
| 2 | tbsp chopped cilantro | |
| 2 | tsp minced garlic | |
| 2 | eggs | |
| ½ | cup panko breadcrumbs | |
| 3 | tbsp CO-OP CENTSIBLES All Purpose Flour | |
| 1½ | tsp ground cumin | |
| 1½ | tsp salt | |
| oil for the pan | ||
| Sauce and garnish | ||
| ½ | cup HELLMANN’S Mayonnaise | |
| 1½ | tsp VADIYA Curry Powder | |
| 1½ | tsp CO-OP GOLD Honey, warmed until liquid | |
| 6 | burger buns | |
| 1 | cup CO-OP GOLD Bread and Butter Pickles | |
| 12 | lettuce leaves | |
Directions
Prep time: 20 minutes
Total time: 40 minutes
Serves: 6
- Open chickpea cans, drain the liquid and rinse the chickpeas in cold water. Drain any excess water. Place the chickpeas and onion in a food processer and pulse until the chickpeas are mashed into rice-size pieces.
- Transfer chickpea mixture to a large bowl and add cilantro, garlic, eggs, breadcrumbs, flour, cumin and salt. Use your hand or wooden spoon to mix well.
- Separate mixture into six balls and form them into patty shapes. Place patties on a parchment-lined tray, cover and chill until ready to use.
- Mix mayonnaise, curry powder and honey in a bowl, mix and chill until needed.
- Preheat a flat top or frying pan to medium heat. Add a little oil to the pan or flat top, then cook patties, flipping once, until both sides are golden brown and warm inside.
- To assemble burgers, place mayo sauce on both sides of the bun. Add pickles to the bottoms and lettuce to the tops. Add chickpea patty to each bun and enjoy.
