Chicken Lettuce Wraps with Mango Salsa
Ingredients
1   tbsp CO-OP GOLD Vegetable Oil
2   chicken thighs
¼   tsp salt
½   cup very thinly sliced red onion
¼   tsp salt
3   tbsp lime juice
½   cup diced mango
¼   cup diced avocado
1   tbsp cilantro
¼   cup HELLMAN’S Mayo
  tbsp sriracha sauce
½   tsp finely minced fresh ginger
1   head butter lettuce

Prep Time: 10 minutes
Cook Time: 20-22 minutes
Total Time: 30 minutes

  • Preheat oven to 375°F. Drizzle oil all over chicken and season with salt. Place on a baking tray and cook for 20-22 minutes until cooked through. Let chicken rest out of the oven for 15 minutes before slicing into ¼-inch slices and set aside for the wraps.
  • Place onion, salt and lime juice in a small bowl and mix and press all to the bottom of the bowl. Let sit for 10 minutes before adding mango, avocado and cilantro. Mix.
  • In a small bowl, mix mayo, sriracha and ginger.
  • To build the wraps, take a leaf of butter lettuce and add some of the mayo mixture to the leaf. Add the sliced chicken and top with mango salsa. Build as you eat or pre-build them all.
