Chicken and Spinach Hummus Bowl
Ingredients
2   boneless, skinless chicken breasts
1   tbsp olive oil
¼   tsp salt
2   tbsp CLUB HOUSE Everything Bagel Seasoning
1   can (540 ml) chickpeas
1   tbsp olive oil
½   cup CO-OP GOLD PURE Hummus Traditional
½   cup spinach
2   tbsp CO-OP GOLD Soft Creamy Feta Cheese
1   tbsp chopped fresh dill
Dressing
3   tbsp olive oil
1   tbsp lemon juice
½   tsp lemon zest

Prep Time: 10 minutes
Cook Time: 12-14 minutes
Total Time: 22-24 minutes
Serves: 2


  • Preheat oven to 375°F. Cut chicken breast into ½ inch pieces and place in a bowl with oil, salt and Bagel Seasoning and mix well. Place in a parchment-lined baking tray. Bake for 12-14 minutes or until cooked through.
  • While the chicken is cooking, drain and rinse the chickpeas. Place a large frying pan on med-high heat with 1 tbsp olive oil and allow it to heat up. Add your chickpeas and cook until lightly crispy, tossing around to make sure they toast evenly. Take out of pan and set aside until you build your bowls.
  • Mix dressing ingredients and set aside.
  • To build your bowls: Add hummus on the bottom of your bowls, followed by chickpeas, spinach, chicken, feta and fresh dill. Drizzle dressing over top and enjoy warm, cold or room temp.
